D&rsquo;abord le s\u00e9chage: plusieurs heures \u00e0 40 C dans un d\u00e9shydrateur jusqu&rsquo;\u00e0 ce que les champignons crissent lorsqu&rsquo;on les manipule, suivi de trois jours au cong\u00e9lateur pour \u00e9liminer d&rsquo;\u00e9ventuels habitants qui pourraient ruiner la r\u00e9colte. Je les ai aussi faits s\u00e9cher puis r\u00e9duits en poudre. C&rsquo;est tr\u00e8s bon comme condiment, par exemple dans une soupe aux pommes de terre.<\/p>\n\n\n\n<p>Hier j&rsquo;ai pr\u00e9par\u00e9 mon premier p\u00f4t de champignons au vinaigre. Les lactaires semblent \u00eatre bien adapt\u00e9s \u00e0 cette pr\u00e9paration. J&rsquo;ai d&rsquo;abord blanchi les champignons (lactaires, chanterelles, chanterelles d&rsquo;automne, laccaire am\u00e9thyste) cinq minutes dans de l&rsquo;eau bouillante sal\u00e9e.
